Looking for a treat that doesn’t require much time or effort? Rocky roads are the answer. These little squares of deliciousness are a winner for all. Here’s my simple go-to recipe.
Ready in: Prep time 15 mins + Chill time 2-3 hrs
Serves: 4
Yields: 6-8 (depending how big you want the chunks)
Ingredients:
200g dark chocolate
200g plain digestive biscuits
135g butter
70g mini marshmallows
3tbsp golden syrup
Method:
Step 1 – Take a deep square baking tin and line with baking paper.
Step 2 – Add the digestives into a food bag and smash with a rolling pin until all the pieces are broken down into thin crumbs. If you don’t have a rolling pin like me you can easily use a potato masher or even a wooden spoon.
Step 3 – Next, on a low temperature melt the chocolate with the butter and golden syrup. You want to get a nice runny consistency.
Step 4 – Turn the heat off but leave on the hob as it helps make a gooey mixture. Add the smashed biscuits & marshmallows and stir until everything is evenly coated. Here you can add more marshmallows if want or even other ingredients such as raisins, nuts etc. I like to keep it simple but the choice is yours.
Step 5 – Add the gooey mixture to the baking tray, cover with some foil & refrigerate for approximately 2-3 hours. Once the rocky road is set take out the fridge and cut up into chunks.
